I may have bought too many peaches. Not intentionally — at the farmers market my arms were full, so I set aside peaches and several other fruits at the register, then went off to find other things. When I came back, the vendor had already packed up what I’d left there, so I didn’t realize he’d also given me someone else’s peaches. When I got home, I discovered almost 25 of them! But this is a fine problem to have, really. Nothing to do but eat ’em. In addition to devouring them (over the sink to catch the juice that runs down my chin), I plan to make several of these peachy recipes, most of which are not for dessert:
Peach, Basil, and Tomato Salad with Balsamic Vinaigrette (4 SmartPoints® value/serving) pairs fruit with sharp raw shallots and bitter arugula to make a sweet, tangy, satisfying lunch.
Chili-Rubbed Salmon with Mango-Peach Salsa (6 SmartPoints value/serving) brings a touch of heat with the sweet. I may double the salsa, and use the rest for…
…Mahi Mahi Soft Tacos (6 SmartPoints value/serving). Just look at that marinade!
Freekeh Salad with Chicken, Peaches, and Tarragon (4 SmartPoints value/serving) sounds absolutely heavenly to me — I love smoky, chewy freekeh.
I’ll swap peaches for mango in Stir-Fried Chili Mango Chicken with Peppers (3 SmartPoints value/serving) and be very, very happy.
Peach Chutney (1 SmartPoints value/serving) makes a perfect accompaniment to simply grilled food. I think I’ll double this one since it’s likely to go fast.
I am absolutely, positively making this Peach Crumble (6 SmartPoints value/Serving). I may not even share it.
Up at the house, where we grill pretty much everything, grilled peaches have already made an appearance. This version, with almonds and honey, has only 1 SmartPoints value per serving!
