Asian-Chicken Lettuce Wraps

Ingredients
- 3 oz cooked skinless boneless chicken thigh(s) (diced)
- 1/4 cup(s) uncooked carrot(s) (diced)
- 1/4 cup(s) uncooked celery (diced)
- 1/4 cup(s) canned water chestnut(s) (diced)
- 1 1/2 Tbsp hoisin sauce
- 3 piece(s) bibb lettuce or Romaine lettuce (large leaves)
- 1 tsp fresh lime juice
- 1 Tbsp uncooked scallion(s) (chopped)
Instructions
Combine chicken, carrot, celery, water chestnuts and hoisin sauce in a bowl; divide between lettuce leaves. Sprinkle with lime juice and scallions; roll up.
