Watercress, mint and yogurt marinade with chicken
This peppery, summer, Greek-inspired marinade is the ultimate fat free way to tenderise meat- try it with chicken as we've done here, or even lamb.

0% fat natural Greek yogurt

- Make the marinade: put all the marinade ingredients in a food processor and blitz until smooth. Season, and combine with the chicken in a bowl. Stir to coat, cover and marinate in the fridge for at least 2 hours or preferably overnight. Thread the chicken onto the skewers, reserving the marinade.
- Mist the skewers and cook on a medium-hot barbecue or griddle pan for 8-10 minutes, turning frequently and brushing with the reserved marinade, until cooked through. Serve garnished with the rocket.
