- Mist the courgette ribbons with cooking spray and season. Heat a nonstick griddle pan to high and griddle the courgette in batches for 2 minutes on each side, set aside and cut into long thin strips.
- Meanwhile, bring a pan of water to the boil and cook the spaghetti to pack instructions. Drain, reserving a cup of cooking water, and put the pasta into a serving bowl. Add the courgette, pine nuts, raisins, lemon zest and juice and a little of the reserved pasta water to the spaghetti. Toss together, then season and serve topped with the cheese.
