Veggie 'pasta' with lemon, chives & goat's cheese

There's no actual pasta in this recipe but spiralised vegetables do a fab job of mimicking the real deal.

Ingredients

Fresh Vegetable Stock

6 tablespoon(s), level

Courgette

1 medium, spiralised

Carrots, raw

1 medium, spiralised

Shallots

1 medium, finely chopped

Medium Fat Soft Goat's Cheese

20 g

Lemon

½ zest(s) of 1

Lemon Juice, Fresh

2 teaspoon(s)

Chives, Fresh

1 teaspoon(s), finely chopped

Instructions

  1. Heat 4 tbsp of the stock in a large nonstick frying pan over a medium-high heat and sauté the courgette, carrot and shallot for 5 minutes, or until tender.
  2. Stir in the remaining stock, half the goat’s cheese and the lemon zest and juice. Cook on a low heat, stirring, until the cheese is melted.
  3. Remove the pan from heat and stir in the chives. Season to taste and crumble over the remaining goat’s cheese.
