The sneaky extra veg in the patties add taste and texture – they’re good for you, too!

Ingredients

Extra lean beef mince (5% fat), raw

300 g

Onion

½ large, grated

Carrots, raw

1 small, grated

Courgette

1 medium, grated

Bacon medallions, raw

4 rasher(s)

Olive Oil

1 teaspoon(s)

Low fat cheese slice

4 slice(s)

Burger bun

4 medium, seeded

Lettuce

4 leaf/leaves, small, shredded

Tomato

2 large, sliced

Instructions

  1. Put the beef, onion, carrot and courgette in a bowl. Season and mix together using your hands. Divide into 4 equal portions, then shape each into an 8cm patty. Chill in the fridge for 20 minutes.
  2. Cook the bacon in a large lidded, nonstick frying pan over a medium heat for 2 minutes each side. Transfer to a plate and cover with foil to keep warm.
  3. Heat the oil in the same pan. Cook the patties over a medium heat for 5 minutes each side or until cooked through. Top each with a cheese slice, cover the pan and cook for 1-2 minutes until the cheese melts.
  4. Lightly toast the rolls, then fill with lettuce, tomato, bacon and patties to serve.
