Ingredients
Olive Oil

Red pepper
½ medium, sliced
Onion
1 large, thinly sliced
Garlic
2 clove(s), crushed
Fennel Seeds
½ teaspoon(s), level
Oregano, Dried
½ teaspoon(s), level
Turkey breast, skinless, grilled
80 g, shredded
Tomato
1 small, cut into chunks
Sourdough Bread
1 serving(s), toasted
Basil, fresh
2 tablespoon(s), torn
Instructions

Heat the oil in a nonstick frying pan over a medium-high heat. Add the pepper and onion and cook, stirring occasionally, for 5 minutes or until golden brown. Put the garlic, fennel seeds and oregano into the pan and cook, stirring, for 30 seconds.

Add the turkey and tomato, and season to taste. Cook for 1-2 minutes, stirring occasionally, until the tomato softens and everything is heated through. Spoon onto the toasted sourdough and garnish with the basil, to serve.
