Ingredients

Olive Oil

4 teaspoons

WW Extra Trimmed Unsmoked Back Bacon

8 rasher(s), cooked, chopped

Onion(s)

2 medium, chopped

Garlic

4 clove(s), crushed

Butternut Squash

1800 g

Vegetable stock cube(s)

2 cube(s), made up in 2 litres of hot water

Parsley, fresh

10 sprig(s), fresh

Instructions

  1. Place a pan over a medium heat and add the olive oil. Fry the Weight Watchers Unsmoked Back Bacon, stirring, for 5 mins or until crisp. Set aside.
  2. Reduce the heat and add the onion and garlic with a little water. Fry, stirring, for 3 mins. Halve, deseed and chop the squash (you don’t need to peel it), then add it with the stock to the pan. Bring to the boil, reduce the heat, cover and simmer for 30 mins.
  3. Remove from the heat and blend until smooth. Return to the pan and stir in the parsley. Season, then warm through over a low heat. Ladle into 4 bowls and top with the bacon.
