Smoked salmon & egg bagels
Medium fat soft cheese
1 medium, very finely chopped
4 teaspoon(s), chopped, plus extra to garnish
1 tablespoon(s), chopped, plus extra to garnish
Egg, whole, raw
4 medium, raw, lightly beaten
Soft seeded bagel thins
- In a bowl, mix one-third of the soft cheese with the shallot and herbs, then season well. Add the eggs and stir to combine.
- Heat the oil in a large nonstick frying pan over a medium heat. Pour the egg mixture into the pan and cook, without stirring, for 1 minute until the eggs begin to set. Cook for 3 minutes, until just set, pushing the egg mixture towards the centre of the pan as it cooks. Remove the pan from the heat and set aside.
- Split and toast the bagel thins, then spread the remaining soft cheese over the bottom halves. Top with the eggs, smoked salmon, extra herbs and remaining bagel thin halves.
