The perfect weekend breakfast: smoked salmon, soft cheese and bagels and shallots, dill and chives to boost the flavour.


Ingredients
Medium fat soft cheese
90 g
Shallots
1 medium, very finely chopped
Dill, Fresh
4 teaspoon(s), chopped, plus extra to garnish
Chives, Fresh
1 tablespoon(s), chopped, plus extra to garnish
Egg, whole, raw
4 medium, raw, lightly beaten
Vegetable Oil
2 teaspoon(s)
Soft seeded bagel thins
4 individual
Smoked salmon

Instructions

In a bowl, mix one-third of the soft cheese with the shallot and herbs, then season well. Add the eggs and stir to combine.

Heat the oil in a large nonstick frying pan over a medium heat. Pour the egg mixture into the pan and cook, without stirring, for 1 minute until the eggs begin to set. Cook for 3 minutes, until just set, pushing the egg mixture towards the centre of the pan as it cooks. Remove the pan from the heat and set aside.

Split and toast the bagel thins, then spread the remaining soft cheese over the bottom halves. Top with the eggs, smoked salmon, extra herbs and remaining bagel thin halves.
