Capers, in Brine

Instructions

Mist a large frying pan with cooking spray and fry the eggs for 3-4 minutes until the whites are crisp and the yolks still runny (or as desired). Set aside.

Spread the avocado over the toast slices, then top with the smoked salmon, capers and the fried eggs. Season to taste, then serve with a squeeze of lemon.
