Ingredients

Pork Loin Steak, Lean, raw

400 g

Onion

Carrots, raw

250 g

Red pepper

1 medium

Green Beans

100 g

Butternut Squash

500 g

Garlic

2 clove(s)

Tinned Tomatoes

400 g

Borlotti beans, cooked

480 g

Tomato Purèe

2 tablespoon(s), level

Dried Mixed Herbs

1 tablespoon(s)

Fresh Chicken Stock

300 ml

Black pepper

Parsley, fresh

4 sprig(s), fresh

Instructions

  1. Heat a large nonstick frying pan and mist with cooking spray. Add the pork, a few chunks at a time, browning them before adding the next batch. Transfer them to a slow cooker.
  2. Add all the remaining ingredients to the slow cooker - the chopped vegetables, garlic, tomatoes, beans, stock and dried herbs. Give everything a thorough stir.
  3. Put the lid on the slow cooker and turn it on. It will need 5-6 hours on high, or 7-8 hours on low – check your manufacturer’s handbook for recommendations.
  4. Serve in warmed bowls, sprinkled with chopped parsley.
