Here is a delicious all-in-one meal for the family. Serve with freshly cooked carrots.

Ingredients

Reduced fat pork sausages, grilled

450 g

New potatoes, raw

500 g, Jersey Royal

Onion(s)

1 large, red, sliced

Sunflower Oil

1 teaspoons

Tinned Tomatoes

400 g, chopped

Apple juice

150 ml, as purchased

Cooking Apple

2 medium, peeled, cored and sliced thickly

Sage, Dried

¼ teaspoons, level

Salt

1 pinch

Black pepper

¼ teaspoons, freshly ground

Instructions

  1. Cook the sausages under a moderately hot grill for 6-8 minutes, turning half-way through cooking.
  2. Meanwhile, heat a non-stick saucepan. Mix the onion with the oil. Add to the pan and fry for 2-3 minutes, stirring continuously.
  3. Stir in the chopped tomatoes, apples, sage and apple juice. Gently bring to the boil and then add the sausages and potatoes. Season with salt and pepper.
  4. Reduce the heat and simmer, covered for 10-15 minutes.
