Keep your cupboards stocked with canned foods so you can make something quick and easy. Enjoy this as a light meal or lunch.

Ingredients

Soft white bread roll

2 medium, farmhouse style

Garlic

2 clove(s), crushed

Tinned Tomatoes

400 g, plum, drained and roughly chopped

Onion(s)

1 small, red, finely chopped

Basil, fresh

2 leaf/leaves, finely chopped

Olive Oil

1 tablespoons

Sardines in tomato sauce

240 g, 2 x 120g cans

Salt

1 pinch, and freshly ground black pepper

Instructions

  1. Place the plum tomatoes, red onion, garlic, basil, olive oil in a large bowl, mix thoroughly and season with salt and pepper.
  2. Cut the rolls in half and place in a hot oven at Gas Mark 7/220°C/425°F for 2 minutes.
  3. Remove the rolls from the oven and spoon the mixture over the top of each roll.
  4. Place the sardine fillets onto each roll and place back in the oven for about 4 further minutes. Serve warm.
