Roast veg with orange, honey & cumin glaze

Perk up vegetables by roasting them with a flavour-packed glaze.

Ingredients

Carrots, raw

300 g, (baby)

Leek

200 g, (baby)

Olive Oil

1 tablespoons

Orange(s)

1 medium

Honey

2 tablespoons, heaped

Cumin seeds

1 teaspoons, level

Salt

1 teaspoons

Black pepper

1 teaspoons

Instructions

  1. Preheat the oven to 200°C, fan oven 180°C, gas mark 6.
  2. Put the carrots and leeks into a large roasting pan or baking dish and add the olive oil. Season with a little salt and pepper, then toss together. Roast for 20 minutes, then remove from the oven.
  3. Mix the orange zest and juice with the honey and cumin seeds, then pour over the vegetables, tossing to coat. Return to the oven for a further 8-10 minutes, until the orange and honey mixture has reduced to coat the vegetables in a shiny glaze.
