Perk up vegetables by roasting them with a flavour-packed glaze.

- Preheat the oven to 200°C, fan oven 180°C, gas mark 6.
- Put the carrots and leeks into a large roasting pan or baking dish and add the olive oil. Season with a little salt and pepper, then toss together. Roast for 20 minutes, then remove from the oven.
- Mix the orange zest and juice with the honey and cumin seeds, then pour over the vegetables, tossing to coat. Return to the oven for a further 8-10 minutes, until the orange and honey mixture has reduced to coat the vegetables in a shiny glaze.
