Roast sea bream with jacket potatoes and salsa

It’s so easy to cook fish – just bake it with some jacket potatoes and serve with a tasty salsa

Ingredients

Potato(es), Raw

400 g, 2 x 200g baking potatoes, scrubbed

Calorie controlled cooking spray

5 spray(s)

Sea bream, cooked

2 fillet(s), medium

Lemon(s)

1 medium, ½ thinly sliced, ½ juiced

Onion(s)

1 small, red, ½ thinly sliced, ½ finely chopped

Chilli, Green or Red

1 teaspoons, or green, chopped fresh, (optional)

Cucumber

¼ individual, finely chopped

Tomato

2 large, finely chopped

Coriander, fresh

2 tablespoons, or parsley , chopped

Instructions

  1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C. Bake the potatoes on the top shelf of the oven for 45 minutes.
  2. Spray a large sheet of foil with low fat cooking spray and place in a roasting pan or on a baking sheet. Arrange the fish on top and slash each one 3 or 4 times with a sharp knife. Push slices of lemon in the cuts, then sprinkle lemon juice over the fish. Top with the red onion slices and season with salt and black pepper. Bake below the potatoes for 20 minutes, or until cooked. To check, test with a fork – the flesh should be opaque and should flake easily.
  3. Meanwhile, make the salsa by mixing together the chopped onion, chilli (if using), cucumber, tomatoes and coriander or parsley. Season.
  4. Serve the fish with the jacket potatoes and salsa.
