Fresh coleslaw only takes minutes to make – and it tastes so much better than bought versions. Try this with red cabbage – or use green if you prefer

Ingredients

Fat Free Natural Yogurt

1 pot(s), small, 8 tablespoons required

Lemon(s)

1 teaspoons, rind, finely grated

Cabbage

160 g, shredded

Carrots, raw

160 g, coarsely grated

Spring Onions

4 medium, very finely sliced

Apple(s)

2 medium, green, cored and chopped

Lemon(s)

2 tablespoons, juice

Salt

1 pinch

Black pepper

1 teaspoons, freshly ground

Instructions

  1. Put the yogurt and lemon rind into a large salad bowl and mix together.
  2. Add the cabbage, carrot, spring onions, apple and lemon juice. Season with salt and pepper and toss together to mix. Cover and chill until ready to serve.Cook’s tip: For a delicious main course, pile portions of this salad into 4 jacket potatoes and top each one with 50g low fat cottage cheese.
