Red Cabbage Coleslaw
Fat Free Natural Yogurt

1 teaspoons, rind, finely grated
160 g, shredded
160 g, coarsely grated
4 medium, very finely sliced
2 medium, green, cored and chopped
2 tablespoons, juice
1 teaspoons, freshly ground
- Put the yogurt and lemon rind into a large salad bowl and mix together.
- Add the cabbage, carrot, spring onions, apple and lemon juice. Season with salt and pepper and toss together to mix. Cover and chill until ready to serve.Cook’s tip: For a delicious main course, pile portions of this salad into 4 jacket potatoes and top each one with 50g low fat cottage cheese.
