Ingredients

Plain White Flour

200 g

Caster Sugar

75 g

Porridge oats

50 g

Desiccated Coconut

50 g

Salt

1 pinch

Low Fat Spread

150 g

Raspberries

250 g

Icing Sugar

1 teaspoons, level

Instructions

  1. Grease a 22cm by 22cm square tin and line with baking paper. Pre-heat the oven to 190c/170c fan/gas mark 5. In a large bowl combine the flour, sugar, oats, coconut and salt. Add the light spread and rub in until you get coarse, damp crumbs.
  2. Press half of the oat mixture into the prepared tin. Pour the raspberries on top and squish down gently, releasing some of the juices. Add the remaining oat mixture and press down carefully, allowing some of the raspberries to peek through.
  3. Bake for 30 minutes or until golden brown. Leave to cool for 1hr and then dust with icing sugar. Cut into squares and serve.
