These Mexican-style tortillas are perfect for a quick hot snack or speedy light lunch. They are seriously tasty and can be on the table in 15 minutes.

Ingredients

Avocado pear

1 individual, peeled, pitted and finely chopped

Onion(s)

1 small, red, finely chopped

Tomato

1 large, finely chopped

Cucumber

1 portion(s), medium, (roughly 5cm), finely chopped

Coriander, fresh

1 tablespoons, chopped, or parsley

Lemon Juice, Fresh

2 teaspoons, or vinegar

Salt

1 pinch, and freshly ground black pepper

Tortilla wrap(s)

2 medium

Cheddar cheese

25 g, grated

Instructions

  1. First make the salsa by mixing together the avocado, red onion, tomato, cucumber and coriander or parsley. Add a few drops of lemon juice or vinegar and season with a little salt and pepper.
  2. Heat a heavy-based frying pan and add one tortilla. Sprinkle half the cheese over the entire surface, then half the salsa over one half of the tortilla.
  3. Cook over a medium heat for 1-2 minutes, until the tortilla is golden brown underneath and the cheese has started to melt. Fold the tortilla in half to cover the filling. Slide onto a plate and slice in two. Repeat with the remaining tortilla.

Notes

You could use pieces of cooked chicken breast instead of the cheese, for a change.This serves 2 for a light meal (4 for a snack).
