Prawn, broccoli & rice noodle salad
Rice Noodles, dry
200 g, long stem
King Prawns, Cooked
Lime Juice, Fresh
60 ml, juice of 2 limes
10 g, grated
- Cook the rice noodles in boiling water for about 6 minutes, until cooked. Drain and rinse under cold water, then put into a bowl. Cook the broccoli for 3 - 4 minutes in a pan of boiling water until tender. Drain and refresh under cold water. Whisk together the sesame oil, soy sauce, lime juice and ginger and drizzle over the noodles. Toss to coat.
- Divide the noodles between four bowls, top with the broccoli, a handful of fresh coriander and the prawns. Then garnish with the sliced spring onion.
