The fruity ice wreath in this punch keeps the drink chilled and looks dramatic on a party table


Ingredients
Lime
2 medium, thinly sliced
Lime Juice, Fresh
2 tablespoon(s)
Lemon
2 medium
Pomegranate
1 medium
Mint, Fresh
20 g
Prosecco
1 bottle(s)
Pomegreat Pomegranate Juice (Chilled)
250 ml
Ginger Beer
200 ml

Layer the lime and lemon slices, pomegranate seeds and mint leaves over the base of a 25cm Bundt tin. Mix together 50ml of the pomegranate juicewith the juice of 1 lime and 550ml water. Pour into the tin, covering the fruit. Carefully transfer to the freezer and freeze for 6-8 hours until firm.

When you’re ready, turn out the ice wreath into a large bowl. Mix the Prosecco with the remaining pomegranate and lime juice in a jug. Add the ginger beer, stir, then pour into the bowl to serve.
