Don’t save pancakes for Pancake Day – enjoy them all year round!

Ingredients

Plain White Flour

110 g, plain

Salt

1 pinch

Egg, whole, raw

1 medium, raw

Skimmed Milk

275 ml

Calorie controlled cooking spray

5 spray(s)

Smoked salmon

200 g

Avocado pear

1 medium, peeled, stoned and sliced

Rocket

1 portion(s), handful

Fat Free Natural Fromage Frais

4 tablespoons

Dill, Fresh

1 tablespoons, chopped, to garnish

Black pepper

teaspoons, freshly ground

Lemon(s)

1 medium, quartered, to serve

Instructions

  1. Sift the flour and salt into a large jug or mixing bowl. Add the egg and milk and beat with a wire whisk to make a smooth batter.
  2. Heat a pancake pan or non-stick frying pan. Spray with low fat cooking spray. Pour in a thin stream of batter, tilting the pan so that it flows evenly across the surface. Cook over a medium heat until the surface has set, then flip the pancake over to cook the other side. Make 4 pancakes in total, spraying the pan with low fat cooking spray before cooking each one. Keep the pancakes in a warm place until all of them are cooked.
  3. Place the pancakes onto 4 warmed plates and top with an equal amount of smoked salmon, avocado and rocket leaves. Add 1 tablespoon of fromage frais to each portion, sprinkle chopped fresh dill and ground black pepper over the top, then serve with lemon wedges.

Notes

Cook’s tip: Cut each pancake into 6 to serve as canapés.
