These refreshing thirst-busters are just what you need when the heat is on

Ingredients

Cucumber

240 g, unpeeled and roughly chopped

Lime Juice, Fresh

1 tablespoon(s)

Lime

1 zest(s) of 1

Agave Syrup

1 tablespoon(s), level

Mint, Fresh

1 sprig(s), plus 8 leaves

Instructions

  1. Place the cucumber, lime juice and zest, agave and mint sprig in a blender and blitz until smooth. Place 2 mint leaves in each of 4 x 100ml lolly moulds. Divide the mixture between the moulds and freeze for 1 hour.
  2. Push a wooden lolly stick into each mould, making sure you leave enough poking out to comfortably hold. Freeze for a further 3 hours, or until solid.

Notes

Want a treat for the adults? Add 50ml white rum to your blender.
