Mediterranean-style fillet steaks
Beef fillet steak, lean, raw
300 g, 2 x 150g fillets
Calorie controlled cooking spray
50 g, baby
2 large, sliced
Chilli, Green or Red
1 teaspoons, finely chopped, optional
30 g, crumbled
- Heat a char-grill pan or heavy-based frying pan. Spray both sides of the steaks with calorie controlled cooking spray. (When char-grilling, always spray the food, not the pan). Place them in the pan and cook over a medium-high heat for 3-4 minutes on each side, depending on the thickness of the steaks and how you like them cooked. Test with a sharp knife, and cook for a little longer if preferred.
- Meanwhile, mix the spinach, tomatoes and chilli (if using) together. Serve the steaks, topped with the spinach mixture. Sprinkle the feta cheese and balsamic vinegar on top and season with black pepper.
