Leeks with Creamy Cheese Sauce

Enjoy leeks in this lovely recipe - either as a light meal or a side dish.
4 medium, medium, trimmed and sliced in half
Medium fat soft cheese
2 teaspoons, level
1 tablespoons, chopped
⅛ teaspoons, freshly ground black
- Put the leeks into a large saucepan and cover with cold water. Add a pinch of salt and bring to the boil. Simmer for 10–12 minutes, until tender.
- Meanwhile, put the low fat soft cheese into a saucepan and gradually whisk in the milk. Add the wholegrain mustard and parsley. Heat gently, stirring, to make a smooth sauce. Check the seasoning, adding black pepper and salt to taste.
- Preheat a medium-hot grill.
- Drain the leeks thoroughly. Share between two individual baking dishes. Pour the sauce on top, then grill for 4-5 minutes until browned.
This recipe serves 2 for a light meal, 4 as an accompaniment. For an accompaniment, you could put the leeks into a baking dish, pour the sauce on top, then cover with foil and keep warm in a low oven.
