Ingredients

Blueberries

100 g

Banana(s)

1 medium, ripe, mashed

Egg, whole, raw

1 large, raw, lightly beaten

Unsweetened Almond Drink

50 ml

Plain White Flour

30 g

Banana(s)

1 medium, sliced

Fat Free Natural Yogurt

150 g

Icing Sugar

teaspoons, level

Instructions

  1. In a medium bowl, whisk together the egg, almond milk and the mashed banana. Sift in the flour and whisk until combined. Set aside.
  2. Put the blueberries in a small pan, add a splash of water and set over a high heat. Cook the blueberries, stirring, until they release their juices, bring to the boil then reduce the heat slightly. Continue to cook, stirring occasionally until it becomes ‘jammy’.
  3. Meanwhile, heat a frying pan over a high heat. Using a spoon, drop the pancake batter into the pan to create 3 separate pancakes then reduce the heat to medium. Allow to cook for 1-2 minutes then flip and continue to cook, until cooked through.
  4. While the pancakes are cooking, set a small frying pan over a low-medium heat and mist with cooking spray. Add the sliced banana and allow to cook for 1-2 minutes, turning halfway.
  5. To serve, place a pancake on the plate and layer with 1/4 of the blueberries, a tablespoon of yogurt and 1/3 of the banana slices and top with a second pancake. Repeat the layers and finish with the remaining pancake, a pinch of icing sugar and the remaining blueberries.
