Ingredients

Wholemeal bread, sliced

4 slice(s), medium

Ricotta Cheese

200 g

Basil, fresh

1 tablespoons, chopped

Chives, Fresh

1 tablespoons, chopped

Cherry Tomatoes

200 g

Balsamic vinegar

30 ml

Olive Oil

1 teaspoons

Instructions

  1. Preheat the oven to 200C/180 fan. Place the tomatoes in a small baking dish with the balsamic vinegar and olive oil and season. Roast for 20 minutes or until they are just softening. Meanwhile, combine the ricotta in a small bowl with the chopped herbs and season. Just before the tomatoes are finished, toast the bread and divide the ricotta mixture between them and spread. Top with the tomatoes and serve.
