Fig, Plum and Blueberry Fruit Salad

Enjoy the beauty and flavour of fresh fruits in season, like this stunning plum, blueberry and fig combination.

Ingredients

Lemon(s)

1 medium, small

Ground Cinnamon

1 g

Artificial sweetener

2 tablespoons, powdered

Plums

350 g, (12oz), halved and pitted

Fig(s)

4 individual, quartered

Blueberries

100 g, (3 1/2oz)

Instructions

  1. Pare a strip of lemon zest from the lemon using a potato peeler. Put this into a saucepan with the squeezed lemon juice, the cinnamon stick and 200ml (7fl oz) water. Add the powdered sweetener. Heat and simmer for 5 minutes.
  2. Add the plums to the saucepan and simmer gently for 5-6 minutes, until tender. Add the blueberries and allow to cool for 10 minutes. Remove the lemon zest.
  3. Add the figs to the plums, stir them together gently, then serve.Use a cinnamon stick or ginger instead of ground cinnamon, if you prefer.
