Dips are quintessential party food. Our recipe features white beans and fresh lemon juice and is served with a colorful array of fresh vegetables.

Ingredients

Co-op Olive Oil

1 tablespoons, extra-virgin

Garlic

3 clove(s), minced

Cannellini Beans, cooked

15½ oz, drained and rinsed

Asda Extra Special Fresh Lemon Mayonnaise

1½ serving(s)

Water

1½ tablespoons

Salt

teaspoons, or to taste

Paprika

½ teaspoons, level, or chopped fresh parsley (optional)

Yellow Pepper

1 medium, or red pepper, cut into thick slices

Cherry Tomatoes

12 individual

Cucumber

1 portion(s), medium, cut into spears

Carrots, raw

3 medium, peeled and cut into sticks

Black pepper

1 pinch, or to taste

Instructions

  1. To prepare dip, heat oil in a small saucepan over medium heat; sauté garlic, stirring constantly, until garlic just begins to turn golden, about 1 to 2 minutes. Remove from heat and let cool slightly.
  2. In a food processor (or blender), combine oil mixture, beans and lemon juice. Process until smooth, slowly adding 1 to 2 tablespoons of water to obtain a thick yet creamy consistency; season to taste with salt and pepper.
  3. Transfer dip to a small bowl and garnish with paprika or chopped parsley, if desired. Serve with prepared vegetables. Yields about 1/4 cup of dip and 1 cup of vegetables per serving.
