Make a batch of this wonderful creamy soup - perfect as a starter, or light meal.

Ingredients

Watercress

½ bunch(es), to garnish

Calorie controlled cooking spray

5 spray(s)

Onion(s)

1 large, finely chopped

Watercress

150 g, including stalks, roughly chopped

Parsley, fresh

3 sprig(s), fresh, including stalks, roughly chopped

Vegetable stock cube(s)

1 cube(s), dissolve in 600ml water

Medium fat soft cheese

200 g, (plain or with garlic)

Cornflour

1 tablespoons, level

Skimmed Milk

300 ml

Salt

1 pinch, and freshly ground pepper

Rachel's Organic Greek Style Low Fat Natural Yogurt

160 g, (4 tbsp)

Instructions

  1. Mist a large saucepan with spray cooking oil. Saute onion until softened, but not browned, about 3-4 minutes.
  2. Add watercress, parsley and vegetable stock. Heat until almost boiling. Reduce heat and simmer, covered, for 10 minutes.
  3. Transfer soup to a blender. Add soft cheese. Blend for 15 - 20 seconds until smooth. Return to saucepan.
  4. Blend cornflour with 2 - 3 tablespoons of the milk. Add to soup with remaining milk. Heat, stirring, until slightly thickened. Cook gently for 2 minutes. Season, then ladle into bowls and garnish with 1 tbsp yogurt per serving and a few watercress sprigs.
