Creamy Lemon and Lime Mousse

Sugar Free Jelly Crystals
25 g, lemon and lime
1 medium, (unwaxed) zest of ½ (plus 2 slices of lemon, to decorate)
Medium fat soft cheese
0% fat natural Greek yogurt
- Pour 300ml boiling water into a heatproof jug. Sprinkle the jelly on top and stir well to dissolve. Stir in the lemon juice and zest. Allow to cool slightly.
- Place the soft cheese and yogurt in a bowl and beat together with a wooden spoon until smooth. Gradually beat in the cooled jelly mixture.
- Transfer the mousse to the jug and pour into 4 x 200ml ramekin dishes. Place in the fridge and leave for about 1½ hours until just set.
- To serve, remove from the fridge and decorate each mousse with half a lemon slice.
