These need 1½ hours to chill, but are well worth the wait!

Ingredients

Sugar Free Jelly Crystals

25 g, lemon and lime

Lemon(s)

1 medium, (unwaxed) zest of ½ (plus 2 slices of lemon, to decorate)

Medium fat soft cheese

200 g

0% fat natural Greek yogurt

100 g

Instructions

  1. Pour 300ml boiling water into a heatproof jug. Sprinkle the jelly on top and stir well to dissolve. Stir in the lemon juice and zest. Allow to cool slightly.
  2. Place the soft cheese and yogurt in a bowl and beat together with a wooden spoon until smooth. Gradually beat in the cooled jelly mixture.
  3. Transfer the mousse to the jug and pour into 4 x 200ml ramekin dishes. Place in the fridge and leave for about 1½ hours until just set.
  4. To serve, remove from the fridge and decorate each mousse with half a lemon slice.
