Ingredients

Dark Chocolate

60 g, broken into small pieces

Instant Coffee

4 teaspoons, level

Cocoa Powder

15 g

Vanilla Extract

½ teaspoons, level

Groovy Food Co. Agave Nectar Light Amber & Mild

30 g

Quark

40 g, 0% fat

Egg white(s), raw

Instructions

  1. Put the chocolate in a heatproof bowl with the cold coffee, cocoa powder, vanilla and agave. Put the bowl over a pan of simmering water, making sure the base of the bowl doesn’t touch the water. Leave for 2 minutes, then remove the bowl and stir gently until the mixture is smooth. Stir in the quark.
  2. Whisk the egg whites in a clean bowl until they form stiff, glossy peaks. Fold a third of the egg white into the chocolate mixture until just combined, then gently fold in the remaining egg white.
  3. Divide between 4 glasses and chill for at least 2 hours until set. Just before serving, break the bars into small pieces and sprinkle over the mousse.
