Bruleed Kiwi and Grape Cheesecakes

These delicious individual cheesecakes have a tasty twist - they are grilled to give a crunchy brulee topping.

Ingredients

Low fat digestive biscuit(s)

4 biscuit(s), crushed

Medium Sherry

4 tablespoons

Kiwi Fruit

3 medium, peeled and sliced

Grapes, Black or White

100 g, (3 1/2oz), seedless red or green

Quark

200 g, (7 oz) or low fat soft cheese

Fat Free Natural Yogurt

150 g, (5 1/2oz)

Vanilla Extract

½ teaspoons, level

Light Brown Sugar

4 teaspoons, demerera

Instructions

  1. Sprinkle half the biscuit crumbs into the base of 4 heatproof teacups or ramekin dishes. Sprinkle 1/2 tablespoon of sherry over the top of them.
  2. Mix together the kiwi fruit and grapes. Spoon half of them into the cups or dishes.
  3. Beat the cheese in a bowl to soften it, then mix in the yogurt and vanilla extract. Spoon half the mixture over the fruit. Repeat all the layers once more. Cover and chill for 10 minutes, or until almost ready to serve.
  4. Preheat a hot grill. Sprinkle 1 heaped teaspoon of demerara sugar over each dessert to cover the surface. Grill until the sugar melts and bubbles. Cool for a few moments, then serve.

Notes

Omit the sherry and use 4 tablespoons of unsweetened white grape juice or orange juice instead.
