Translate an Indian biriyani dish into a spiced rice salad with curry powder and coriander - delicious!

Ingredients

Brown Rice, dry

350 g, cook according to pack

Curry Powder

1 teaspoons, mild

Prawns, Peeled & Cooked

225 g, cooked

Tomato

2 large, chopped

Cucumber

¼ portion(s), medium, finely chopped

Spring Onions

4 medium, chopped

Chilli, Green or Red

½ individual, deseeded and finely chopped

Coriander, fresh

2 tablespoons, chopped

Lime Juice, Fresh

2 tablespoons, (or lemon juice)

Instructions

  1. Mix the brown rice and curry powder together.
  2. Add the prawns, tomatoes, cucumber, spring onions, chilli and coriander. Stir together gently.
  3. Season with salt and pepper, then add a squeeze of lime or lemon juice. Keep chilled until ready to serve.

Notes

Brown rice will give you more Vitamin B. Remember that it takes about 25 minutes to cook.
