This pudding can also be cooled to room temperature for a custard-like consistency or served cold. Complement with fresh berries and a cup of fruit tea.

Currant Bread

200 g, crusts removed

Low Calorie Jam

2 teaspoons, heaped, apricot

Skimmed Milk

500 ml

Egg, whole, raw

2 medium, raw

Caster Sugar

1 tablespoons

Vanilla Extract

½ teaspoons, level

Ground Nutmeg

½ teaspoons, level

Ground Cinnamon

½ teaspoons, level


  1. Preheat oven to Gas Mark 4/350°F/180°C. Coat a 600ml ( 1 pint ) ovenproof baking dish with cooking spray.
  2. Spread bread with jam and cut into squares. Layer into dish.
  3. Combine milk, eggs, sugar and vanilla extract. Pour over bread and sprinkle with cinnamon and nutmeg.
  4. Bake for 1 hour or until set. Brown under grill if desired. Serve hot.
