Gnocchi is such a time-saver – and it makes this great-tasting vegetarian meal.

Ingredients

Broccoli, raw

400 g, broken into small florets

Philadelphia Light Medium Fat Soft Cheese

200 g

Skimmed Milk

100 ml

Stilton

50 g, chopped

Black pepper

1 pinch

Gnocchi, Fresh

500 g

Parmesan Cheese

20 g, use vegetarian hard cheese

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6.
  2. Bring a large saucepan of water to the boil. Add the broccoli and cook for 4-5 minutes until just tender.
  3. Meanwhile, tip the Philadelphia into a mixing bowl, beat with a wooden spoon to soften it, then mix in the milk and stir in the blue cheese. Season with black pepper.
  4. Lift the broccoli from the saucepan with a draining spoon into a colander, saving the water in the saucepan. Cook the gnocchi in the same water, according to pack instructions. Drain well.
  5. Mix the gnocchi and broccoli with the cheese mixture and transfer to an ovenproof dish. Scatter the Parmesan cheese over the surface and bake for 15-20 minutes until bubbling and golden.
