Ingredients

Black eyed beans, cooked

400 g, drained and rinsed

Onion

1 medium, diced finely

Spring Onions

4 medium, diced finely

Peppers, all types

2 medium, de-seeded and diced finely

Cucumber

½ portion(s), medium, diced finely

Chilli, green or red

½ individual, de-seeded and chopped finely

Cherry Tomatoes

150 g, quartered

Lemon Juice, Fresh

2 tablespoon(s)

Parsley, fresh

2 tablespoon(s), finely chopped

Instructions

  1. Mix together the beans, onions, spring onions, pepper, cucumber, chilli and tomatoes. Stir in the lemon juice and parsley. Cover and set aside for at least 1 hour before eating.
