Ingredients
Calorie controlled cooking spray
4 spray(s)
Reduced fat pork sausages, grilled
2 medium
Bacon medallions, raw
4 rasher(s)
Tomato
2 large, plum, halved lengthways
Egg, whole, raw
2 medium, raw
Ciabatta Bread
120 g, 2 x 60g slices, split
Spinach
20 g
Tomato Chutney
40 g, 2 tbsp
Instructions

Mist a large nonstick frying pan with cooking spray and set over a medium-high heat. Add the sausages and bacon, and cook, turning occasionally, for 8-10 minutes or until the sausages are cooked though and the bacon is crisp. Slice the sausages thinly. Transfer to a plate with the bacon and cover to keep warm. Put the tomatoes in the pan and cook for 1-2 minutes on each side or until tender. Transfer to a plate and set aside.

Wipe the pan clean, mist with more cooking spray and set over a medium heat. Crack in the eggs and fry for 3 minutes or until cooked to your liking.

Toast the bread. Top each base with spinach, tomatoes, sausage, bacon, egg and chutney. Sandwich with the bread tops and serve.
