Notes

Whisk the eggs & a splash of water in a large jug until combined. Season to taste. Mist a large frying pan with cooking spray & preheat over a medium high heat. Add the egg mixture to the pan & swirl to coat. Cook for 1 minutes, until just set. Transfer the omelette to a plate. Top the wrap with an omelette then add spinach, smoked salmon, spring onion & radish. Roll up the wrap to enclose the filling, then serve.
