25g cocoa powder
- Preheat the oven to 180c, fan 160c, gas mark 4 and line a 900g loaf tin with baking paper. Sift the cocoa into a heatproof bowl, add 4 tbsp boiling water and stir to dissolve. Set aside to cool.
- Mix the bananas, eggs and vanilla in a bowl. Sift the flour into a separate bowl and rub the spread in with your fingers. Stir the sugar and the banana mixture into the flour until well combined. Transfer 1/3 of this mixture to a spare bowl and stir in the cocoa mixture until completely combined.
- Spoon random dollops of each into the prepared tin until you have used all the mixture and then swirl with a knife for a marbled effect.
- Bake for 50 minutes to 1 hour or until risen and golden and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 10 minutes, and then turn out onto a cooling rack. Slice and serve.
