Meatball & pepper pizza

SERVES 4 – Prep time 20 minutes + resting – Cook time 45 minutes – Calories 402 per serving SmartPoints - 10 per serving. 40 per recipe.


Calorie controlled cooking spray
½ small onion, finely chopped
1 garlic clove
227g can chopped tomatoes
250g white bread mix (We used Sainsbury’s Crusty White Bread Mix)
200g spinach
1 yellow pepper, de-seeded and sliced
100g less than 3% fat chicken sausages (we used Heck Chicken Italia from Tesco)
125g light mozzarella
2tsp Olive Oil
Fresh basil, to garnish (optional)


  1. Heat a pan, mist with cooking spray, add the onion, garlic and a little water and soften for 5-6 minutes. Add the tomatoes with a splash of water from the can, then simmer the sauce gently until thickened (this should take around 25 minutes). Cover and set aside.
  2. Meanwhile, combine the bread mix with 160ml lukewarm water in a bowl. Stir together for 5 minutes, then turn out onto a lightly floured worktop and leave for 5 minutes. Knead for 2 minutes and let it rest again for 5 minutes. Wilt the spinach in a pan and then, when cooled, squeeze out any excess water.
  3. Mist a large baking sheet with cooking spray and shape the rested pizza dough into a thin circle using your fingers. Leave for 30 minutes in a warm place. When ready to top, spread the sauce over the base, add the spinach and then the pepper. Squeeze little meatballs from the sausage skins and dot across the pizza, then tear the mozzarella and place it in the gaps.
  4. Drizzle the olive oil over everything then cook for 15 minutes or until the peppers are a little charred, the meatballs are golden and the base of the pizza is firm. Garnish with the basil, if using, and serve.
