Orange & chilli drumsticks
SERVES 4 – Prep time 20 minutes plus marinating – Cook time 50 minutes – SmartPoints - 4 per serving. 9 per recipe.
8 chicken drumsticks, skinless
- In a large bowl, combine the chicken, orange zest and juice, chilli, thyme, paprika, cumin and garlic. Cover and put in the fridge to marinade for 30 minutes.
- Preheat the oven to 200c, fan 180c, gas mark 6. Put the chicken on a large baking tray with all the marinade, season and roast for 40 mins, turning halfway through.
- Meanwhile, make the cauliflower ‘rice’. Grate on the coarse side of a grater, then put in a pan with a splash of boiling water. Put the cauliflower ‘rice’ in a heatproof bowl, cover with cling film, pierce and then microwave for 3 mins on high, mixing the ‘rice’ halfway through cooking. Stir through chopped coriander to add flavour.
