Orange & chilli drumsticks

SERVES 4 – Prep time 20 minutes plus marinating – Cook time 50 minutes – SmartPoints -  4 per serving. 9 per recipe. 


8 chicken drumsticks, skinless
Grated zest and juice of 1 orange
1 red chilli, deseeded and chopped
2 tsp finely chopped thyme leaves, plus extra to serve
​1 tbsp smoked paprika
1 tbsp ground cumin
2 garlic cloves, crushed
For the cauliflower ‘rice’
1 whole cauliflower, cored and cut into large chunks
2tbsp chopped fresh coriander


  1. In a large bowl, combine the chicken, orange zest and juice, chilli, thyme, paprika, cumin and garlic.  Cover and put in the fridge to marinade for 30 minutes.
  2. Preheat the oven to 200c, fan 180c, gas mark 6.  Put the chicken on a large baking tray with all the marinade, season and roast for 40 mins, turning halfway through.
  3. Meanwhile, make the cauliflower ‘rice’. Grate on the coarse side of a grater, then put in a pan with a splash of boiling water. Put the cauliflower ‘rice’ in a heatproof bowl, cover with cling film, pierce and then microwave for 3 mins on high, mixing the ‘rice’ halfway through cooking. Stir through chopped coriander to add flavour.
