Lemon-Marinated Salmon with Couscous

This delicious grilled salmon dish makes an ideal weekend supper to impress

Serves 4
Takes 25 minutes


4 x 125 g skinless salmon fillets
zest and juice of 1 lemon
160 g dried wholewheat couscous
2 ripe tomatoes, sliced into wedges
4 cm piece of cucumber, de-seeded and thinly sliced
a small handful of fresh coriander leaves, chopped roughly
½ small red onion, sliced thinly
1 teaspoon extra virgin olive oil
salt and freshly ground black pepper

 

  1. Put the salmon fillets in a large shallow bowl and drizzle most of the lemon juice over. Leave to marinate for 5 minutes.
  2. Preheat the grill to medium and line the grill pan with foil. Grill the salmon, turning occasionally, for 8–10 minutes, or until the fillets are just cooked through.
  3. Meanwhile, cook the couscous following the packet instructions. Fluff it up with a fork, season and add the lemon zest, remaining lemon juice and other ingredients. Serve one salmon fillet per person, with the couscous salad.
