Marbled chocolate and banana loaf

25g cocoa powder
450g ripe banana (unpeeled weight), mashed
2 eggs, beaten
½ tsp vanilla extract
225g self-raising flour
110g low-fat spread
110g light brown soft sugar


  1. Preheat the oven to 180c, fan 160c, gas mark 4 and line a 900g loaf tin with baking paper. Sift the cocoa into a heatproof bowl, add 4 tbsp boiling water and stir to dissolve. Set aside to cool.
  2. Mix the bananas, eggs and vanilla in a bowl. Sift the flour into a separate bowl and rub the spread in with your fingers. Stir the sugar and the banana mixture into the flour until well combined. Transfer 1/3 of this mixture to a spare bowl and stir in the cocoa mixture until completely combined.
  3. Spoon random dollops of each into the prepared tin until you have used all the mixture and then swirl with a knife for a marbled effect.
  4. Bake for 50 minutes to 1 hour or until risen and golden and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 10 minutes, and then turn out onto a cooling rack. Slice and serve.
