Chocolate chunk oatmeal cookies
Soft and chewy with little explosions of dark chocolate, these oaty treats are perfect for when you fancy something sweet.
45 g Lurpak Unsalted Butter
75 g Billington's Unrefined Light Muscovado Sugar
50 g Plain White Flour
1/2 teaspoons, level Baking powder
70 g Porridge oats
1 medium, raw Egg, whole, raw, lightly beaten
1/2 teaspoons, level Vanilla Extract
50 g Dark Chocolate, roughly chopped
1 pinch Salt
Let the baking commence:
- Preheat the oven to 180°C, fan 160°C, gas mark 4. Line 2 baking sheets with greaseproof paper. Put the butter in a small pan and melt over a low heat. Add the sugar, and stir until dissolved.
- Combine the flour, baking powder, and oats in a bowl with a pinch of salt, then add the butter and sugar mixture, egg and vanilla extract. Fold in the chopped chocolate.
- Roll the mixture into 16 evenly sized balls and put them on the baking sheets, leaving plenty of space between them. Bake for 10-12 minutes or until golden, then cool on a wire rack.
