Chocolate & pistachio meringues

30g dark chocolate (min 70% cocoa solids)
40g lighter mascarpone cheese
12 mini meringues
10g pistachio kernels, roughly chopped
Edible gold glitter, to decorate


  1. Melt the chocolate in a heatproof bowl set over a pan of simmering water – don’t allow the bowl to touch the water. Let the chocolate cool and then beat in the mascarpone.
  2. Dot the chocolate mixture over the mini meringues, sprinkle with the pistachios and decorate with the edible glitter. Transfer to a platter and keep cool until ready to serve.
