Make mine a mocktail!

It’s not Christmas without some festive cheers! Try one of our specially developed, mouth-watering tipples

Apple, elderflower & mint mocktail (pictured)
Cut through the richness of all that Christmas food with this light, refreshing mocktail.

To make it, put 350ml cloudy apple juice and 12 mint leaves in a large jug and muddle using a cocktail muddler. If you don’t have one, use the end of a rolling pin or the back of a spoon. Top up with 400ml sparkling elderflower pressé, stir and add ice. To serve, divide between 4 chilled tumblers and decorate with some extra mint leaves.

Virgin Martha
You’ve heard of Virgin Mary, but what about her sassy cousin Martha? She’s spicy, big on flavour and full of healthy ingredients.

Fancy it? Juice 850g tomatoes, 500g watermelon flesh and 30g fresh ginger in a juicer, then stir in the juice of 1½ limes and a pinch of cayenne pepper to taste. Chill. Fill 4 tall tumblers with ice and pour over the chilled juice. Serve garnished with half a celery stick and a sprinkling of cayenne pepper. If you like, make an edible cocktail stirrer by skewering cherry tomatoes, coriander leaves, slices of red chilli, melon balls and lime wedges.

Grapefruit & thyme mocktail
Grapefruit’s in season right now, so why not try using it to make a mocktail?

Put a handful of fresh thyme (leaves only) and 1 tsp caster sugar in a jug and muddle. Add 125ml freshly squeezed pink grapefruit juice and the juice of 1/2 a lemon; stir well. Fill a Champagne coupe glass with crushed ice; strain over the mint and juice mixture and top up with soda water. Serve garnished with a little grapefruit zest.
