Cut through the richness of all that Christmas food with this light, refreshing mocktail.
To make it, put 350ml cloudy apple juice and 12 mint leaves in a large jug and muddle using a cocktail muddler. If you don’t have one, use the end of a rolling pin or the back of a spoon. Top up with 400ml sparkling elderflower pressé, stir and add ice. To serve, divide between 4 chilled tumblers and decorate with some extra mint leaves.

You’ve heard of Virgin Mary, but what about her sassy cousin Martha? She’s spicy, big on flavour and full of healthy ingredients.
Fancy it? Juice 850g tomatoes, 500g watermelon flesh and 30g fresh ginger in a juicer, then stir in the juice of 1½ limes and a pinch of cayenne pepper to taste. Chill. Fill 4 tall tumblers with ice and pour over the chilled juice. Serve garnished with half a celery stick and a sprinkling of cayenne pepper.
