Chocolate & pistachio meringues
Weight Watchers Recipe
2 SmartPoints® per meringue
30g dark chocolate (min 70% cocoa solids)
40g lighter mascarpone cheese
12 mini meringues
10g pistachio kernels, roughly chopped
Edible gold glitter, to decorate
- Melt the chocolate in a heatproof bowl set over a pan of simmering water – don’t allow the bowl to touch the water. Let the chocolate cool and then beat in the mascarpone.
- Dot the chocolate mixture over the mini meringues, sprinkle with the pistachios and decorate with the edible glitter. Transfer to a platter and keep cool until ready to serve.
