Wilted Tuscan kale with garlic crumbs

Transform cabbage with a hint of lemon zest and garlic crumb.

Fresh lemon rind

300 g, (1 bunch), Tuscan variety, rinsed, shredded
Grated parmesan cheese

- Heat oil in a large non-stick frying pan over medium heat. Cook breadcrumbs and garlic, stirring, for 3-4 minutes or until golden. Sprinkle with lemon rind and remove from heat. Cook cabbage in same pan with a squeeze of lemon juice, stirring, for 2-3 minutes or until wilted. Toss through garlic crumbs and grated parmesan cheese to serve.
