Sweet lychees in a stir-fry may sound unusual but it works beautifully in this recipe. It provides the perfect sweet balance to the hosin, soy and fresh ginger sauce filled with tasty nutritious greens.

Ingredients

Sunflower oil

2 tsp

Pork fillet or tenderloin, raw

400 g, (Buy 500g, fat trimmed)

Onion

1 medium, cut into thin wedges

Fresh ginger

2 tsp, grated

Green string beans

200 g, sliced

Sugar snap peas

150 g, trimmed

Red capsicum

1 medium, thinly sliced

Chinese broccoli (gai lan)

1 bunch(es), cut into 4cm lengths

Lychee(s)

12 individual, peeled, stone removed, halved

Hoisin sauce

1 tbs

Soy sauce

1 tbs

Fresh basil

½ cup(s), Thai

Instructions

  1. Heat half the oil in a large wok on medium-high. Stir-fry pork in 2 batches for 2-3 minutes or until cooked. Transfer to a plate.
  2. Reheat wok with remaining oil and stir-fry onion, ginger, beans, snap peas and capsicum for 2 minutes or until softened. Add gai lan and lychee and stir-fry for 1 minute. Add hoisin sauce and soy sauce. Stir-fry for 1-2 minutes or until heated through. Serve with basil.
