Once you’ve made this fantastic fruit salad, all other pretenders will fall by the wayside.

Ingredients

Pineapple

1 cup(s), (half small pineapple) cut into chunks

Mango

2 medium, sliced

Banana(s)

2 medium, sliced

Fresh strawberries

250 g, halved

Fresh blueberries

125 g

Passionfruit(s)

2 medium, pulp

Lime(s)

½ medium, juiced, rind finely grated

Unsweetened coconut water

¼ cup(s), (60ml)

Fresh mint

¼ cup(s), sprigs, to serve

Instructions

  1. Place pineapple, mango, banana, strawberries and blueberries in a large serving bowl.
  2. Combine passionfruit pulp, lime rind and juice with coconut water in a small bowl. Pour over fruit and gently stir. Chill, covered, for 30 minutes to macerate.

Notes

SERVING SUGGESTION: 99% fat-free plain yoghurt (contains dairy) and flaked almonds (contains nuts).
